Weekend Treat

I decided to try and make a treat each weekend that fit within my husbands Keto diet. We talked this over and believe for him it is better to keep it to a weekend as he does not want to begin craving treats. This is such a simple dish and it ticked the boxes for feeling like a pudding.

Farsighted is stage 1 set the first jelly , middle picture is stage 2 let both jelly’s set and an hour later decorate and enjoy.

Hartley sugar free jelly, what a find , the raspberry is really nice and very simple to make. I made one jelly and poured it into glass dishes then I made another jelly and only added half the boiling water and left it to cool down then I whipped 3 tablespoons of double cream till stiff , folded one tablespoon of Greek yogurt into the cream and them whisked that mix into cooling jelly , I then added that to the set jelly and placed back in the fridge till they set, I topped them with double fresh cream a fresh raspberry and a tiny piece of mint , they looked and tasted lovely.

I feel I am going to look at recipes that include a small amount chocolate as he has had no chocolate for about 12 weeks and it would be nice to have a small chocolate treat occasionally. I will let you know when I find the right treat
